Before starting a career as a football coach, Griffin spent seven seasons playing professional football, including four in the NFL with the Denver Broncos and Kansas City Chiefs.
Griffin was a football star at Nimitz High School before playing for the University of Oklahoma. He started for the Sooners for three seasons and helped lead Oklahoma to a national championship in 2000. He finished his college career at Oklahoma with 5,275 all-purpose yards and 3,938 rushing yards from 1999-2002. He remains No. 6 among all-time Sooner rushers and ranks fourth in school history in all-purpose yards. He also was named to the All-Big 12 first team and Big 12 All-Academic team that year.

He appeared in 16 games, including five starts, in his first two seasons with the Broncos.
